Getting My Family’s Nutrition On Track Post Pandemic

Okay, My family cannot be the only one who’s nutrition completely fell off the deep end over the past year.

Burnout can really force survival mode. Easier options, pre-packed snacks, cereal, takeout. We did what we had to do. All of us did.

The pandemic clouds are parting and rays of sunshine are breaking through. It’s beginning to feel like real life is on the horizon here and our sugar-fuelled life is just feeling gross now.

I decided to film a video over the past couple weeks documenting me starting to steer our family’s ship into a healthier lifestyle. I am realizing it is not a straight line but I know our goal and I am determined to get us there. Here’s the video:

Barbecue Your Fast Healthy Meals To Add Flavour

Barbeque Peaches and ChickenWe just got a new barbecue and I have been getting very creative, including grilling foods you wouldn’t usually think to barbecue. Here are some quick, easy and healthy meals I whipped up. They are tasty fast and healthy!

Grilled Peach And Chicken Summer Salad
Grilled SaladsIngredients: (serves two) 2 white flesh peaches, 2 chicken breasts, 1 tbsp sliced almonds, 3 cups of fresh spinach, 1 lemon

Cut and remove pits of peaches. Grill each side for two minutes. Grill both chicken breasts. Toast sliced almond in a pan. Chop grilled chicken and peaches to a bed of spinach. Top with toasted almonds and a squeeze of fresh lemon for flavour. Healthy, tasty, filling and fast!

Grilled Portabello Mushrooms Toped With Goat Cheese – this recipe is a little more indulgent. It would be a great starter to a meal!
Grilled Mushrooms Goat Cheese BalsamicIngredients: portabello mushrooms, goat cheese, fresh basil, balsamic vinegar, honey (I haven’t added any quantities, because it all depends on personal preference)

Grill the portobello mushrooms for approximately four minutes on each side. Top with goat cheese and fresh basil. Drizzle balsamic vinegar and honey on top.
