Upping My School Lunch Game - Nesting Story

Can you believe that a new school year is once again approaching? I don’t know about you, but I am counting down the days. The reason: I will now have two out of four of my kids in school. Yes, that’s right, my daughter Beau is starting Kindergarten this year. Can I hear angels singing? Yes, yes I can.

Up until this point, I have only had to make school lunches for Holden, our very basic and picky eater. I was that mom that would send her son to school with left over pizza, pre-packaged cookies and a banana.  His lunches were very boring and didn’t include the most nutritious options.

Now that Beau (the foodie) is starting school this year, its time to up my school lunch-making game, using Rubbermaid LunchBlox®. My kids’ school has a lunch and two snack breaks. So, the fact that the LunchBlox® has three compartments is perfect. One larger container houses the main lunch item and the other two, smaller containers house the snacks. Plus, there is a re-usable blue-ice pack that fits neatly between the containers. This system is very clever and practical.

Based on my kids’ food preferences, I gathered up a variety of ingredients and started to get creative.  Note: each of these meals are nut-free, which is a requirement in my children’s school.

School Lunch Prep - Nesting Story

Here is are a few exciting meals I have whipped up that are fast, tasty and balanced:

Lunch #1

Sandwich – cream cheese and spinach on whole wheat, cut into a fun butterfly shape

Snack – blackberries and raspberries

Snack – plain popcorn with a handful of chocolate chips added

Sandwich – turkey, spinach and mustard on cheese bread

Snack – carrot sticks, sliced red pepper and snow peas

Snack – chocolate chip cookies
